The Queen of Puddings

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the base

  1. Preheat the oven to 350°F (175°C).

  2. Combine bread crumbs, milk, sugar, beaten egg yolks, grated lemon rind, and butter in a bowl.

  3. Bake until set but not watery.

Top and finish

  1. Whip egg whites until stiff, then gradually beat in white sugar and lemon juice.

  2. Spread jelly or sweetmeats over the baked pudding.

  3. Top with the whipped egg whites and return to the oven to bake lightly.

  4. Serve cold with cream.

What each ingredient does

Bread crumbs
Form the body of the pudding and soak up the milk to set into a soft custard.
Egg yolks
Thicken the milk mixture as they heat, giving the pudding its set custard texture.
Egg whites
Whipped into a stiff foam that bakes into a light, crisp-topped meringue.
Milk
Provides the liquid that the crumbs absorb and the eggs set into custard.
Sugar
Adds sweetness and helps the meringue topping become stable and glossy.
Butter
Adds fat for richness and a smoother, more tender crumb.

The step that matters

Bake until set but not watery. Underbaking leaves the egg-thickened custard runny, while overbaking makes it curdle and weep. Baking until just set keeps the texture smooth and firm enough to hold the topping.

Flavor stand-ins for the lemon

How well each one fits the dish's main ingredients (bread, milk, sugar, egg, butter):

  1. Vanillabetter flavor fit
  2. Figbetter flavor fit
  3. Peachabout as good a flavor fit
  4. Lemonthe original

Fit is the average pairing score against bread, milk, sugar, egg, butter. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
