What each ingredient does

Tart apples
Provide the main body and tart flavour that balances the sugar.
Grated bread
Forms the absorbent layers that soak up juices and hold the pudding together.
Butter
Adds richness and carries flavour through the layers as it melts.
Sugar
Sweetens the apples and helps them soften and brown slightly during baking.

Swap the nutmeg

How well each one fits the dish's main ingredients (apple, bread, butter, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Clovefits about as well
  4. Gingerfits less well
