The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff foam, they give the cream its light, airy structure and help it set.
Cream
Adds richness and body, and its fat gives the finished dessert a smooth, creamy texture.
Lemon juice
Adds acidity and bright lemon flavour that balances the richness of the cream.

The step that matters

Return the mixture to the heat and stir slowly. Egg whites in the mixture thicken as they warm, but too much heat or fast stirring can curdle or scramble them. Gentle, steady stirring thickens the custard evenly without cooking the eggs into lumps.

Swap the lemon

How well each one fits the dish's main ingredients (egg, cream):

  2. Raspberryfits better
