Why it works: Tomato and potato match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 2,798 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Lamb Chops
Ingredients
Directions
Trim the lamb chops neatly and scrape the bones.
Season the chops with pepper and roll them in butter.
Broil the chops carefully until cooked.
Add more butter, salt, and black pepper on top of the cooked chops.
Wrap small pieces of white paper around the ends of the bones.
Arrange the chops on a dish with a center of tomatoes, peas, champignons, or mashed potatoes.
For a variation, dip the broiled chops in bread crumbs, brown them in lard, and serve as above.
