For Cooking and Dressing Terrapins
Ingredients
Directions
Place the terrapin in boiling water for 5 minutes, then remove and discard the water.
Put fresh water in the pot and bring it to a boil.
Remove the outer skin from the legs and flesh using a towel.
Return the terrapin to the boiling water and cook for 45 to 75 minutes, until the joints break under slight pressure.
Place the terrapin on its back with the head facing you. Carefully remove the gall bladder from the left-hand liver.
Cut up the other liver and any usable parts, avoiding the gall bladder and sand-bag.
Chop the pipes into a hash for thickening, and discard the nails and bones from the head.
Remove the film from the eggs and place them in cold water for a short time.
