Ingredients

Directions

Prepare the cauliflower

  1. Remove the outer leaves and cut off the ends of the stalks from the cauliflower.

  2. Soak the cauliflower heads in salt water for 1 hour, heads down.

Cook and make the sauce

  1. Boil plenty of water in a pot and cook the cauliflower for 35 minutes if large, or 25 minutes if small.

  2. While the cauliflower is cooking, bring the cream to a boil in a separate pot.

  3. Add the flour to the boiling cream and simmer until it thickens.

  4. Season the sauce with salt and white pepper to taste, then pour it over the cooked cauliflower.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the main body of the dish and becomes tender when boiled.
Sweet milk or cream
Provides the liquid base and richness of the white sauce.
Flour
Thickens the boiling cream into a smooth sauce as its starch swells.
Butter
Adds fat and a rich flavour to the sauce.

The step that matters

Adding the flour to the boiling cream. Flour needs to be stirred in while the cream is hot and then simmered so the starch swells and cooks out. Adding it to cold liquid or skipping the simmer can leave lumps or a raw, floury taste.

Swap the white pepper
