Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together.

  3. Mix in the well-beaten yolk of the egg.

  4. Peel and grate the apples, then add them to the mixture.

  5. Add the juice and half the grated rind of the lemon.

  6. Season with nutmeg to taste.

  7. Fold in the beaten egg white until stiff.

  8. Pour the mixture into a baking dish and bake for 30 minutes.

  9. Serve with hot sauce or cream.
