Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the egg yolks with the sugar.

  2. Add the flour, salt, essence of lemon, and grated nutmeg.

  3. Beat the egg whites to a stiff froth and gently stir them in.

  4. Fold in the grated coconut.

Bake and serve

  1. Line square tin pans with well-greased paper and pour in the mixture to a depth of 1 inch.

  2. Bake in a 400°F (200°C) oven for 30 minutes.

  3. Cut into squares and serve with or without icing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air for lift, while the yolks add richness and help set the crumb.
Sugar
Sweetens the batter and helps the yolks thicken and hold a soft, tender crumb.
Flour
Provides the starch and gluten network that gives the cake its structure as it sets.
Grated coconut
Adds moisture, chew, and a rich flavour to the crumb.

The step that matters

Folding in the beaten egg whites. Stiffly beaten whites hold air bubbles that make the sponge rise. Stirring them in gently keeps those bubbles intact; vigorous mixing deflates the batter and yields a dense cake.
