Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Cut the fish through the center of the back and lay it back down in a dripping pan.

  2. Season the fish with salt and pepper.

  3. Sprinkle flour and small pieces of butter on top.

  4. Add ½ pint of water to the pan.

Bake and serve

  1. Place the pan in a hot oven at 400°F (200°C) to bake.

  2. When nearly done, pour ½ cup of cream over the fish.

  3. Bake until the top is nicely browned.

  4. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whitefish
Forms the main body of the dish, cooking through in the oven to become flaky and tender.
Flour
Dusted on top, it helps the surface brown during baking.
Butter
Melts over the fish, adding fat for richness and helping the top brown.
Cream
Added near the end, it adds richness and a creamy, gently thickened sauce.

The step that matters

Pour the cream in near the end of baking. Cream added too early can split or reduce unevenly under long heat, so adding it when the fish is nearly done keeps the sauce smooth and rich while the top still browns.
