Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Forms the main body of the salad and supplies its flesh and flavour.
Egg yolks
Thicken the sauce as they set with gentle heat, and add richness.
Butter
Adds fat for richness and a smooth, silky mouthfeel to the sauce.
Vinegar
Provides acidity that sharpens the sauce and balances the rich yolks and butter.
Celery
Adds crunchy texture that contrasts with the soft salmon.

The step that matters

Stir the yolks into the hot mixture. Egg yolks thicken when gently heated, but if the hot liquid is poured in too quickly or stirred too little, the yolks can scramble into lumps. Adding the hot mixture slowly while stirring keeps the sauce smooth.

Swap the celery

How well each one fits the dish's main ingredients (salmon, vinegar, mustard, pepper, butter, egg, cream):

  1. Tarragonfits better
  2. Capersfits better
  3. Dillfits better
  4. Celerythe original

Fit is the average pairing score against salmon, vinegar, mustard, pepper, butter, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
