Puff Pastry

Ingredients

Directions

  1. Sift the flour onto a clean surface and make a hole in the center.

  2. Add the lemon juice and gradually stir in the water to form a light paste.

  3. Knead the paste until it has a similar consistency to the butter.

  4. Press the butter in a clean cloth to remove excess water and shape it into a square.

  5. Roll out the pastry, place the butter in the center, and fold the pastry over it.

  6. Let it rest for 10 minutes, then roll it into a long thin strip.

  7. Fold the pastry into thirds and let it rest again for 10 minutes.

  8. Repeat the rolling and folding process seven times, resting in between.

  9. Use just enough flour to prevent sticking, and lift the rolling pin frequently.

  10. When ready to use, roll the pastry to ½ inch thickness and cut into rounds.
