Ingredients

Directions

The book says “a quick oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Layer cracker crumbs in a buttered pudding dish.

  3. Add a layer of raw oysters, season with butter and pepper.

  4. Pour a few spoonfuls of milk and oyster liquor over the oysters.

  5. Repeat layers of crumbs and oysters until the dish is full, finishing with crumbs on top.

  6. Dot the top with butter and moisten with milk.

  7. Bake covered until moisture bubbles, then uncover and brown lightly.

  8. Serve with sliced lemon, bread, and butter.
