Mixed Pickles

Ingredients

Directions

  1. Prepare a large stone jar or clean wooden container.

  2. Layer tiny cucumbers and other small vegetables, sprinkling coarse sea salt between each layer.

  3. Add cold water to the second layer of salt to keep the pickles submerged.

  4. Place an inverted plate with a stone on top to prevent floating.

  5. After 2-3 weeks, pour off the brine and select firm pickles, discarding any soft ones.

  6. Wash the firm pickles well and cover them with cold, clear water.

  7. Change the water after 24 hours and repeat until the next day.
