Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red peppers
Provide the main body and flavor of the sauce once pounded into a paste.
Garlic
Adds a pungent aroma that lingers in the sauce.
Oil
Carries flavor and gives the sauce a rich, smooth texture.

The step that matters

Transfer the mixture to a saucepan with the boiling oil. Adding the paste to very hot oil should be done carefully, since the oil can spatter. Hot oil also blooms the garlic and pepper aromas, so the flavor carries through the sauce.

  4. Clovethe original

Fit is the average pairing score against pepper, garlic, vinegar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
