Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard into a firm, sliceable structure as they cook.
Milk
Provides the liquid base and moisture that gives the custard its soft, tender texture.
Corn
Adds sweetness and body to the custard mixture.

The step that matters

Bake in a water bath. Setting the molds in hot water moderates the heat around the custard. Gentle, even heat keeps the eggs from overcooking, which would make the custard grainy, watery, or rubbery.

Swap the parsley

How well each one fits the dish's main ingredients (corn, egg, onion, milk, butter, cream, sauce):

  1. Nutmegfits better
  2. Capersfits about as well
  3. Tarragonfits about as well
  4. Parsleythe original

Fit is the average pairing score against corn, egg, onion, milk, butter, cream, sauce. Candidates are from the same food group and used in at least 100 recipes.
