Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Dissolves into the syrup to sweeten the sherbet and softens its icy texture.
Egg whites
Whipped and folded in to add lightness and a smoother, airier texture.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.
Ginger
Provides the aromatic, spicy flavour that defines the sherbet.

The step that matters

Folding in the egg whites when partly frozen. If the mixture is fully frozen, the whites cannot be evenly folded in, and if it is still liquid they will deflate and the sherbet will be dense and icy. Partial freezing gives a slushy base that holds the air.

Swap the ginger

How well each one fits the dish's main ingredients (sugar, lemon, egg, whisky):

  1. Cinnamonfits about as well
  2. Nutmegfits about as well
  3. Gingerthe original
  4. Parsleyfits less well

Fit is the average pairing score against sugar, lemon, egg, whisky. Candidates are from the same food group and used in at least 100 recipes.
