Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the coffee mixture as they set and add richness.
Cornstarch
Thickens the liquid when boiled, giving the cream a smooth, set body.
Fine sugar
Sweetens the coffee and balances its bitterness.
Weak coffee
Provides the liquid base and the coffee flavour.

The step that matters

Bringing the mixture to a boil while stirring. Cornstarch needs to reach a boil to fully thicken, but constant stirring prevents lumps and keeps the egg yolks from scrambling or sticking to the pan. Stop heating once it thickens to avoid a grainy texture.
