Ariegated Meat

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Add enough boiling, slightly salted water to cover the rolls.

  3. Press a plate over the rolls, cover, and bake for 1 hour.

  4. Drain the liquid and save it.

  5. Remove the plate and invert the dish onto a serving tray, leaving the rolls in a mound.

  6. Thicken the saved liquid slightly and pour it over the rolls or serve separately.

  7. Garnish the mound with butter.
