Wash the coral in cold water and pound it with 1 ounce of butter in a mortar.
Pass the pounded mixture through a sieve into a bowl.
In a stewpan, mix 1 ounce of flour and ½ ounce of butter with a wooden spoon.
Add ½ cup of cold water and stir until it boils and thickens.
