Why it works: Peach and sugar are a kitchen classic. They rank in the top 17% of all ingredient pairs, and cooks put them together in 2,308 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓
Canned Peaches
Ingredients
Directions
Prepare the peaches
Select firm peaches and remove the skins by placing them in boiling water for a few seconds.
Cut the peaches in halves or leave them whole as desired, then pack them in jars.
Make the syrup
Make a syrup by combining 1 cup of sugar with 1 ½ cups of water and bring it to a boil.
Steam and seal
Place the lids lightly on the jars and steam the peaches for 15 minutes.
Fill each jar with the hot syrup and steam for an additional 10 to 15 minutes, or until the peaches are tender.
Remove the jars from the steamer, fit on rubber seals, and fill to overflowing with boiling water before sealing quickly.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

What each ingredient does
- Firm peaches
- Provide the fruit that softens during steaming and carries the flavour.
- Sugar
- Sweetens the syrup and adds body to the liquid surrounding the fruit.
The step that matters
Sealing the jars quickly after filling with boiling water. Sealing quickly while the contents are very hot helps create a vacuum as they cool, which keeps the jars sealed and the fruit safe to store. Delay lets the temperature drop and weakens the seal.
