Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Dress, clean, and weigh the duck.

  2. Stuff and truss the duck like a chicken.

  3. Place the duck on a rack in a baking pan.

  4. Season the duck and cover the breast with bacon slices.

  5. Dissolve salt in boiling water and pour into the pan.

  6. Roast in a hot oven at 400°F (200°C) for 20 minutes per pound plus an additional 20 minutes.

  7. Baste frequently during roasting.

  8. Serve with Giblet Sauce.
