What each ingredient does

Fat
Carries the flavour from the roasted meat and forms the base for the flour.
Flour
Thickens the liquid and, when browned, adds a nutty, roasted flavour and colour.

The step that matters

Stir the flour until well browned. Flour cooked in fat must be stirred constantly so it browns evenly without scorching. Browning builds colour and roasted flavour, while undercooked flour tastes raw and pasty.
