Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Lobster Cutlets

Ingredients

Directions

  1. Mix the salt, lemon juice, cayenne, and parsley with the lobster meat.

  2. Prepare the sauce by melting the butter in a saucepan, adding flour, and gradually whisking in the milk until smooth.

  3. Cook the sauce until thickened, then combine it with the lobster mixture and cool.

  4. Shape the mixture into cutlet forms.

  5. Dip each cutlet in breadcrumbs, then in the beaten egg, and again in breadcrumbs.

  6. Fry the cutlets in deep fat until golden brown, then drain on paper towels.

  7. Insert a small lobster claw into the end of each cutlet for garnish.

  8. Serve with Sauce Tartare.
