What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly gel as it cools.
Sugar
Adds sweetness and balances the sharpness of the lemon.
Lemon juice
Adds acidity that brightens the flavour of the jelly.
Walnuts
Add crunch and a contrasting texture to the soft jelly.

The step that matters

Let the mixture cool until partially set before folding in the fruit. Gelatine sets as it cools. If the mixture is still very liquid, the chopped walnuts, orange and banana will sink or settle unevenly instead of staying suspended through the jelly.

Swap the walnut

How well each one fits the dish's main ingredients (lemon, sugar, orange, banana):

  1. Almondfits better
  2. Pistachiofits better
  3. Chestnutfits about as well
