Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the sauce

  1. In a saucepan, melt the butter over medium heat.

  2. Stir in the flour until smooth.

  3. Add the grated onion, nutmeg, lemon juice, paprika, salt, and black pepper.

  4. Gradually stir in the sweet milk and cook until the sauce is rich and creamy.

Bake and serve

  1. Add the lobster and chopped eggs, mixing well.

  2. Transfer the mixture to a baking dish, top with buttered bread crumbs and grated cheese.

  3. Bake in a 400°F (200°C) oven until browned and serve hot.

What each ingredient does

Lobster
Provides the main body and sweet seafood flavour of the casserole.
Hard-boiled eggs
Add richness and a soft, custardy texture to the filling.
Butter
Enriches the sauce and carries flavour into the roux.
All-purpose flour
Thickens the milk into a smooth, creamy sauce with the butter.
Sweet milk
Forms the liquid base of the sauce, giving it a creamy body.
Grated cheese
Melts and browns on top, adding savoury flavour and a golden crust.

The step that matters

Cooking the sauce until rich and creamy. The flour must be fully cooked into the butter and milk so the sauce thickens smoothly and loses any raw starchy taste. Stopping too early leaves a thin or floury sauce that will not hold the lobster well in the bake.

Swap the onion

How well each one fits the dish's main ingredients (lobster, egg, butter, flour, nutmeg, lemon, pepper):

  1. Shallotfits better
  2. Spinachfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against lobster, egg, butter, flour, nutmeg, lemon, pepper. Candidates are from the same food group and used in at least 100 recipes.
