What each ingredient does

Celery
Forms the main vegetable body, which softens into a tender, mild base when boiled.
Milk
Gently cooks the celery in a mild, creamy liquid that keeps it moist as it softens.
Egg sauce
Adds richness and a smooth, creamy coating over the celery and toast.
Toast
Gives a crisp, buttered base that holds the soft celery and absorbs the sauce.

The step that matters

Boil gently until quite soft. Boiling too hard can break up the celery and make it ragged, while under-cooking leaves it fibrous. Gentle heat softens the cell walls evenly so the head keeps its shape.

Swap the celery
