Stuffed Potatoes

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Thoroughly wash the potatoes.

  2. Cut a thin slice from one end so they can stand.

  3. Cut a thicker slice from the top to use as a cover.

  4. Use an apple corer to make a hole nearly to the bottom of each potato.

  5. Fill the cavity with finely chopped bacon.

  6. Replace the covers on the potatoes.

  7. Bake in a hot oven at 400°F (200°C) until cooked.
