The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red raspberries
Provide the main flavor and color, and most of the body of the ice.
Sugar
Adds sweetness and lowers the freezing point, keeping the ice soft rather than rock hard.
Lemon juice
Adds acidity that brightens the raspberry flavor and balances the sugar.
Egg whites
Whipped and folded in, they trap air for a lighter, more airy texture.

The step that matters

Fold in the egg whites when partly frozen. If the mixture is still fully liquid, the whites deflate and separate; if it is too firm, they will not blend in evenly. Timing the fold at a partly frozen, spoonable stage lets the whites incorporate and hold air.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
