Lobster Canapes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Shape the bread with a fluted cutter and toast it.

  2. Chop the lobster meat and season with coarse sea salt, paprika, and lemon juice.

  3. Moisten the bread with a thick white sauce.

  4. Spread the lobster mixture on the bread, rounding it slightly like a meringue.

  5. Cover with creamed butter mixed with a small portion of egg white.

  6. Sprinkle with grated cheese and brown delicately in the oven at 400°F (200°C).
