Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. In a baking dish, combine the milk, rice, sugar, butter, and salt.

  3. Add the beaten eggs and flavor with nutmeg or vanilla.

Bake

  1. Bake in the oven for two hours or until the rice is swollen and half the liquid is absorbed.

  2. When a brown skin forms on top, gently stir it under a couple of times without disturbing the top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Swells as it cooks and absorbs liquid, giving the pudding its body and texture.
Eggs
Set when baked, binding the custard so the pudding holds together and turns creamy.
Milk
Forms the liquid base that the rice absorbs and the eggs set into a custard.
Sugar
Sweetens the pudding and contributes to browning of the top skin.
Butter
Adds fat for richness and a smoother, softer mouthfeel.

The step that matters

Gently stirring the brown skin. Stirring under the skin only once or twice lets the rice finish absorbing liquid while keeping the top skin intact, so the pudding stays creamy rather than becoming grainy or broken.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, rice, sugar, butter, egg):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Turmericfits less well
  4. Gingerfits less well

Fit is the average pairing score against milk, rice, sugar, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
