What each ingredient does

Sweet almonds
Provide the main body and crunch of the nougat.
Powdered sugar
Melts to form the sweet binding that holds the almonds together.

The step that matters

Dry the sliced almonds over low heat. Moisture left on the almonds can interfere with the sugar binding, and high heat can scorch them before the nougat is made. Gentle heat dries them evenly without browning or burning.
