Oven, in the book's wordsA cool oven

Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Clean and cut cauliflowers into pieces.

  2. Boil them in water with salt until they come to a boil.

  3. Drain the cauliflowers and place them in the sun to dry for two days.

  4. Once dried, place them in a 300°F (150°C) oven until fully dry.

  5. When cold, store them in paper bags until needed.
