A Fricandeau De Volatile Avec Truffles

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fowl

  1. Bone the fowl and lard it with bacon seasoned with pepper.

  2. Line the bottom of a stewpan with slices of fat bacon.

  3. Place the bones and trimmings of the fowl on the bacon, then add the fowl itself.

  4. Add cleaned truffles, stock, bay leaves, onion, and sweet herbs.

  5. Cover the fowl with bacon slices and lay paper over it.

Stew and brown

  1. Set on a stove and let it stew gently for about 1.5 hours.

  2. Put a little fire on top of the stewpan.

  3. After stewing, place the fowl in a 400°F (200°C) oven for a few minutes to brown.

Serve

  1. Serve the fowl with the strained and reduced gravy, adding sliced truffles and white wine.

  2. Garnish with cresses.

What each ingredient does

Fowl
Provides the main meat, which is gently stewed until tender.
Bacon
Larding and lining add fat and moisture, keeping the lean meat juicy during stewing.
Stock
Liquid that gently cooks the fowl and forms the base of the gravy.
Truffles
Add a strong earthy aroma to the finished dish and gravy.
White wine
Adds acidity and brightness to the reduced gravy.

The step that matters

Gentle stewing. Stewing the fowl gently keeps the meat tender and moist. Boiling it hard would toughen the proteins and drive out juices, leaving the meat dry and stringy.

Swap the onion

How well each one fits the dish's main ingredients (pepper, clove, white wine, truffle):

  1. Shallotfits better
  2. Capsicumfits better
  3. Carrotfits better
