Steak and Kidney Pudding

Ingredients

Directions

  1. Fill a basin with steak, kidney, and seasoning.

  2. Pour in enough water to come within 2 inches of the top.

  3. Moisten the edges of the crust, cover the pudding, and press the crusts together to seal.

  4. Turn up the overhanging paste.

  5. Wet a cloth in hot water, flour it, and tie it around the pudding.

  6. Place the pudding in boiling water and let it boil for at least 4 hours.

  7. Replenish with hot water as needed to keep it covered and boiling.

  8. After boiling, cut a round piece in the top of the crust to prevent bursting.

  9. Serve the pudding in the basin or an ornamental dish, with a napkin pinned around it.
