What each ingredient does

Small white button onions
The main vegetable, which softens slightly and takes on the sharp flavour of the brine.
Vinegar
Provides acidity that sharpens the flavour and helps preserve the onions.
Whole pepper
Adds a warm, aromatic spice that infuses into the vinegar.
White mustard seed
Adds a pungent, aromatic bite that infuses into the brine.
Sweet oil
Adds richness and a smoother mouthfeel if used.

The step that matters

Pour the hot vinegar over the onions to cover them. The onions need to be fully submerged so the acidic liquid reaches every surface and pickles them evenly. Pieces left exposed above the liquid pickle unevenly and are more likely to spoil.

Swap the onion
