Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, combine the milk, sweetener, peach water (or lemon extract or vanilla), and coarse sea salt.

  3. Rub butter over the bottom and sides of a baking dish.

  4. Pour the custard mixture into the prepared dish and grate a little nutmeg on top.

  5. Bake for about 45 minutes, or until a teaspoon handle inserted in the center comes out clean.

  6. Alternatively, butter small cups and place them in a shallow pan of hot water, filling them with the custard mixture.

  7. Keep the water boiling until the custard is set.
