Ingredients

Directions

Prepare the pink cream

  1. Divide the cream in half.

  2. Sweeten ½ quart of cream with loaf sugar and stir in enough currant jelly to achieve a fine pink color.

  3. Place this mixture in a glass bowl.

Layer and top

  1. Layer the sliced cake in the center, spreading each slice thickly with raspberry jam or marmalade.

  2. Flavor the remaining ½ quart of cream with lemon juice and beat it to a stiff froth.

  3. Heap the whipped cream over the cake to completely cover it.

  4. Ensure both creams are very sweet.

What each ingredient does

Rich cream
Provides the fat and body for both the pink cream and the whipped topping.
Loaf sugar
Sweetens the cream and balances the tartness of the lemon juice.
Sliced almond sponge cake or lady cake
Forms the soft base that the jam and whipped cream rest on.
Raspberry jam or marmalade
Adds fruity sweetness and moisture where it soaks into the cake layers.
Lemon juice
Adds acidity and bright flavor to the whipped cream.

The step that matters

Beat the lemon cream to a stiff froth. Cream whips because its fat traps air. Stop once it holds stiff peaks, since beating further can turn it grainy and buttery, and it will not hold its shape over the cake.

Swap the currant

How well each one fits the dish's main ingredients (cream, sugar, almond, raspberry, lemon):
