What each ingredient does

Peaches
Make up most of the preserves, providing the fruit flesh, flavor and body.
Sugar
Sweetens the fruit and draws out moisture, helping the preserves thicken and keep.

The step that matters

Heat slowly and add water. Sugar and fruit scorch easily on direct heat. Adding a little water and heating slowly helps prevent burning while the sugar dissolves and the fruit softens evenly.
