Why it works: Milk and lemon are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 19,053 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Soak the tapioca in warm water for 1½ hours.
Boil the sweet milk in a saucepan.
Beat the egg yolks with 1½ cups of sugar in a bowl.
Make the custard
Add the beaten yolks and soaked tapioca to the boiling milk.
Let the mixture cool, then flavor with lemon.
Top and bake
Beat the egg whites with 3 tablespoons of sugar until stiff in another bowl.
Spread the frosting over the tapioca mixture and bake at 350°F (175°C) until light brown.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Tapioca
- Thickens the milk as it cooks, giving the cream its body.
- Egg yolks
- Enrich and thicken the custard, adding richness and a smooth texture.
- Egg whites
- Whipped to stiff peaks to form a light topping that browns in the oven.
- Sugar
- Sweetens the custard and, when whipped with the whites, stabilizes the meringue topping.
The step that matters
Adding the beaten yolks to the boiling milk. If the hot milk is not stirred while the yolks go in, the egg proteins can scramble into lumps. Adding the yolks gradually while stirring tempers them so the custard stays smooth.
