What each ingredient does

Green grapes
Provide the fruit pulp and natural pectin that gives the jelly its body and flavor.
Sugar
Sweetens the jelly and helps it set firm as it cools and thickens.

The step that matters

Boil the mixture for fifteen minutes. Boiling the grape puree with sugar concentrates it and lets the pectin and sugar reach the level needed to set. Too short a boil leaves the jelly runny, while overcooking can make it stiff and dull in flavor.
