What each ingredient does

Molasses
Provides the base sweetness and dark flavor, and its sugars set into the candy as it cools.
Butter
Adds fat that softens the texture and makes the candy easier to pull.
Baking soda
Reacts with the hot syrup to add tiny gas bubbles, lightening the candy's texture.

The step that matters

Boiling to the hard stage. Removing the kettle too early leaves the candy soft and sticky, while cooking too long can make it brittle. The cold-water drop test shows when the sugar concentration is right for pulling.
