Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Provides the main flavour and body of the soup once simmered and sieved.
Cornstarch
Thickens the soup as its starch swells when heated with liquid.
Egg
Adds richness and body to the soup when beaten in just before serving.
Milk
Adds creaminess and softens the flavour of the soup.

The step that matters

Stir in the milk and do not boil again. Milk can curdle or separate when boiled for long, and boiling again after thickening can break the smooth texture. Keeping it just below a boil preserves a silky soup.

Swap the celery

How well each one fits the dish's main ingredients (onion, milk, egg):

  1. Garlicfits better
  2. Nutmegfits better
  3. Cinnamonfits better
  4. Celerythe original

Fit is the average pairing score against onion, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
