Liver and Bacon

Ingredients

Directions

  1. Remove the rind from the bacon and fry it in a pan until crisp. Transfer to a hot dish.

  2. Wipe the liver strips with a damp cloth, then dust with flour, pepper, and salt.

  3. Fry the liver in the hot bacon fat, adding butter if there isn't enough fat. Cook thoroughly, turning frequently.

  4. For gravy, sprinkle flour into the pan with the remaining fat, add pepper, salt, warm water, lime juice, and cayenne pepper. Thicken and pour over the liver and bacon.
