Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Bake the potatoes at 400°F (200°C) until tender.

  2. Cut the potatoes lengthwise and scoop out the insides.

  3. Mash the potato flesh and mix in milk, butter, coarse sea salt, pepper, and finely chopped onion.

  4. Refill the potato shells with the mashed mixture.

  5. Return the stuffed potatoes to the oven for a few minutes until golden brown.

  6. Serve on individual plates garnished with a sprig of parsley.
