Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Main vegetable; cooking softens them, and their sugars brown in the oven.
Milk
Adds moisture and milk sugars that help the surface brown.
Butter
Adds fat and richness, and helps the onions brown.

The step that matters

Brown quickly in a 400°F (200°C) oven. High dry heat drives the Maillard reaction and caramelisation that give browned flavour. Left too long, the onions can dry out and lose their tenderness.

Swap the onion

How well each one fits the dish's main ingredients (pepper, butter, milk):

  1. Potatofits better
  2. Capsicumfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against pepper, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
