Walnut Wafers

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. In a mixing bowl, beat the eggs until frothy.

  3. Add the sugar and beat well.

  4. Sift together the baking powder, barley flour, cinnamon, and salt; add to the egg mixture.

  5. Fold in the chopped walnuts.

  6. Pour the mixture into a greased baking pan and bake for 10 minutes.

  7. Cut into squares while hot. Alternatively, bake in tiny scalloped tins if preferred.
