Puff Paste

Ingredients

Directions

  1. Put the flour in a bowl and mix in the salt.

  2. Add the lemon juice to the cold water and mix it with the flour until it resembles the consistency of butter.

  3. Knead the mixture well and set aside for five minutes.

  4. Squeeze out all moisture from the butter and form it into a pat.

  5. Roll out the paste to ½ inch thick, place the butter in the center, and fold the paste over it.

  6. Press the edges together and roll out again, folding in thirds.

  7. Turn the rough edges towards you and roll out again, then refrigerate for 10-15 minutes.

  8. Repeat this process until the paste has been rolled out seven times, refrigerating between every two rolls.
