Why it works: Haddock and whiting match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 103 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
Haddocks a LA Royale
Ingredients
Directions
Stuff the haddocks with quenelle force-meat of whiting.
Place them head to tail on a baking sheet.
Season with pepper and coarse sea salt, then bake them.
After cooling, cover with a thin layer of quenelle force-meat.
Arrange fillets of soles on top in a slanting direction.
Mask the heads with force-meat mixed with pounded lobster-coral.
Form eyes and mouth with truffles.
Cover with thin layers of bacon and a buttered paper.
Bake in the oven for 45 minutes before serving.
Remove the paper and bacon, absorb excess grease with a clean napkin.
Transfer to a serving dish, sauce with Parisian sauce, and garnish with quenelles of lobster and truffles.
