Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Melted butter carries the flavour and gives the sauce its rich, smooth body.
Essence of anchovies
Supplies the salty, savoury anchovy flavour that defines the sauce.

The step that matters

Simmer gently and bring to a boil only at the end. Melted butter can separate or scorch if it overheats, and the mixture needs only a short gentle simmer to blend the flavours without turning greasy or bitter.

Swap the mace

How well each one fits the dish's main ingredients (butter, pepper):

  1. Parsleyfits better
  2. Sagefits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
