Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobster meat
Provides the main sweet, tender protein that forms the body of the salad.
Mayonnaise or remoulade
Adds fat and creaminess, binding the coral into a smooth, rich dressing.
Hard-boiled eggs
Add soft, creamy texture and mild richness to the salad.
Lobster coral
Gives the sauce a deep, concentrated lobster flavour and a rich colour.

The step that matters

Rubbing the coral through a sieve. Pounding and sieving breaks the roe into very fine particles, so the sauce becomes smooth rather than grainy when mixed with mayonnaise. Adding the coral gradually helps it blend evenly without lumps.

Swap the lettuce
